Estefanía
Titi's actual name is Estefanía. I thought it would be Tatiana because, obviously, Titi is her nickname. How do I know this? Because today, Jenny didn’t come. I believe she asked for permission for personal reasons, so Titi took her place at the station. I am her fan. She likes what she does, she is patient, and she teaches me a lot every moment.
I started painting tart shells (4.5 and 6 cm) black and white. First, I separated them according to the daily order sheet. Then, I put them on a tray and took them to the oven for three to four minutes to brown them because they are always pale. I even set the timer now because an entire tray of tart shells got burned a few days ago. Next, I waited until they weren’t too hot, brushed them with chocolate, and filled them with lemon curd.
She filled the chocolate ones with caramel sauce and ganache to make texture tarts, and she taught me how to make the decorative shape with the piping bag and nozzle. I practiced on the table, and after a few tries, I got it!
I helped with the mini lemon and orange cakes, glazed them, and zested lemon or orange on top. I took the trays to the dispatch room, where they pack the pastries to send them to stores or events. Then, Titi had me zest an entire batch of lemons (100 lemons). I did, and after that, I helped her with the mise en place to make macarons! I had already noticed how they do them, but it's a whole different experience actually making them/but actually making them is a whole other ball game.
I weighed all the ingredientes, and then, sadly, I had to go because it was 12:10 pm, but I didn’t want to be late to CEN.
