The Best Way to Grate Orange Zest
Did you know there’s an accessory for the KitchenAid that allows you to grate fruit zest effortlessly?
I bet you didn’t! That’s exactly what Chef Titi had me do. I zested 120 oranges without lifting a finger!
The accessory works like this: Grab an orange, insert it into the attachment, turn on the mixer, and the orange starts spinning. The only thing you have to do is hold the citrus grater and move it little by little until the orange is completely peeled. It was amazing, and it felt really cool!
Once I finished that task, she had me count some tart shells to put them in the oven—to reheat and brown them a bit more.
And oh my god! I totally messed up. When it was time to take them out of the oven, I could only find one glove, so I tried to carry an entire tray from the oven to the station with just one hand. Bad idea. Terrible idea. My wrist couldn’t handle the weight of the tray. I asked for help, and somehow, this guy managed to do it. I have no idea how. And the worst part? It happened twice.
You know what was even worse? Later, Titi told me that the gloves actually have a designated spot, but they weren’t there. She grabbed a pair from another station and carried the last tray herself. I felt so silly for not thinking of that! Obviously, I had to find another glove—but I never did. That was my humble and embarrassing moment of the day.
Later, I had to paint the tart shells—the vanilla ones with white chocolate and the chocolate ones with dark chocolate. Then, I helped her fill the vanilla ones with lemon curd while she assembled the "Tarta Texturas" with the chocolate ones.
The day ended on a good note, though, because the guy who works at the station kindly offered me one. But shh... keep it a secret!
